This thread is a little old, but in case someone is looking for similar information in the future, another kayak/ski hybrid that comes standard with a kick up rudder, is the Kaskazi Skua AR( Adventure Racer ),from South Africa.
In the U.S., it is imported by Venture Sport in Florida.
The boat measures at 5300mm x 580mm (17' 3" x 23").
It's glass layup weighs in at about 23kg with a capacity of 160kg.
