Don't know about a full hull coating, but you can apply this where the blade of your paddle can hit the ski. It will protect the gelcoat.

Look at the RPS rail tape used to protect the rails on stand up paddleboards.
Not cheap, but works very well and can be removed (and reused) with a little heat. I've used it on the catch surfaces to protect from paddle scratches, and where my heels go in the bottom of the footwells. Be sure to install it when above 70 F. and wet the surfaces before applying, to allow you to work out bubbles easier. It also has enough texture to help hold the ski more securely when you pick it up.

Not sure what that coating is, but a good automotive polish every now and then will not go amiss. Make sure you tape up any damage asap as the laminate will absorb water and make sure it is dry inside.
