I paddle an Interceptor Edge and I am happy with its stability. The Edge has been updated in recent years and I think it is referred to as an Edge2. It is said to be more stable than its brother, the Interceptor Glide. However, the key is the seat depth. Interceptor skis come in deep, mid and high seat set-ups. There's about 12mm between each seat height option. Only a couple of high seats skis are made each year for elite paddlers so the chances of finding one of those are pretty slim. It might be that a mid seat Edge is more cranky than a deep seat Glide. The key is the seat depth and the deep seat Edge is highly recommended. Hope that helps if its not too confusing. Good luck.
