starting angle on an Epic small-mid for a novice?

Want recommendations as to blade angle setting and length for a novice using an Epic Small-Mid, 210-220cm.

current skis: SES Ultra. sculling boats: Fluidesign Lwt, Wintech, Empacher.

210cm and I like 53 degrees.

I think it depends mostly on how vertical your stroke is.
The more vertical generally the higher twist.
But 60 degrees works for most people.
45 degrees can be helpful in really strong side winds sometimes.

Just get an adjustable one and find out what suits you.

Also need to consider paddler height. I am 6'1" and find that setting my paddle at 209 cm with 60 degree feather angle works best. If paddling flat water, I may set the length a bit longer at 212-215.
